1 Prepare Ingredients

Cut cherries in half and remove stone. You can leave a few cherries whole for garnish, if you wish. Pick parsley and mint leaves, discard stems and finely chop. Crumble fetta.

2 Toast Walnuts

Place a small fry pan over low-medium heat and add walnuts to the dry pan. Toast for 3-4 minutes, being careful not to burn. Set aside. Roughly chop walnuts.

3 Toss Salad

Place mixed lettuce, cherries, herbs, half the walnuts and half the fetta in a large bowl with dressing; toss gently to combine.

4 You Plate It

Serve salad sprinkling the remaining fetta and walnuts over the top to garnish. It's as easy as that. Enjoy!
