First Things First

1 Prepare Tray

Line a tin with baking paper. Place 16 malt o milk biscuits at the bottom of the tin.

2 Prepare Mango

Peel and finely dice the mango. Place 3/4 of the mango into a bowl and mash with a fork. Reserve the remaining mango for the next step.

3 Whip Cream and Assemble

In a mixer or bowl whisk the cream and condensed milk until thick. Fold through the crushed mango and mango pieces. Spread over the prepared biscuits, then top with the remaining 16 biscuits, ensuring they align with the bottom layer. Freeze for at least 6 hours.

4 You Plate It

Remove mango sandwiches from the freezer and slice into 16 pieces by cutting between the biscuits. Serve immediately. Enjoy!
