Slow Cooker

Step 1

1 Prepare Ingredients

Turn slow cooker on. Peel and dice onion. Peel garlic and finely dice. Peel carrot and cut into thick rounds. Peel potatoes and cut in half. Thick slice celery. Pick parsley leaves and dice, discarding stems. Coat steak in flour and season with salt and pepper.

Step 2

2 Brown Bacon & Steak

Heat a pan on medium high heat with a drizzle of oil. Fry bacon until crispy, about 2-3 minutes. Add bacon to the slow cooker. In the same pan, brown the steak for 1-2 minutes each side. You might have to add more oil to the pan because the flour might soak up the oil, you want to hear a sizzle when the steak is cooking. Add the steak to the slow cooker.

Step 3

3 Brown Onions

To the same pan that you browned the steak. Add onions and 12 garlic (you will need the rest for the bread) and brown, about 3-5 minutes. Add beer to the pan and scrape off any bits stuck to the bottom, cook for about 30 seconds. Add onions and beer to the slow cooker.

Step 4

4 Finish Irish Stew

Add potatoes, carrots, celery, thyme, stock mix and 2 cups of water to the cooker. Stir until ingredients are all mixed together. Cook on low for 8 hours or high for 4 hours. Preheat oven to 200C for ciabatta.

Step 5

5 Make Garlic & Herb Bread

Soften butter in the microwave for a few seconds. Mix butter with parsley and remaining garlic together. Cut ciabatta in half. Spread garlic and herb butter onto each slice. Bake in the oven until golden, about 5 minutes.

Step 6

6 You Plate It!

Divide stew between the bowls, serve with the garlic bread on the side. Enjoy!
