First Things First

Our vegetables and fruit come as fresh as can be, so please give them a quick wash before you get started.

1 Prepare Veggies

Put a pot of water on to boil for step 4. Cut broccoli into florets. Trim ends from green beans. Trim top from snow peas and remove strings. Cut squash into quarters. Dice zucchini into large dice.

2 Toast Almonds

Heat a small dry pan over medium heat. Add flaked almonds and toast for 2-3 minutes until golden brown. Tip onto a saucer to stop further browning.

3 Make Herb Butter

Pick fresh parsley and mint, discarding stems. Peel garlic. In a food processor, blend the butter, herbs, garlic, salt and pepper until smooth. Set aside for step 5.

4 Cook Veggies

Season the water liberally with salt. Add the squash, zucchini and broccoli to the boiling water. Cook for 2-3 minutes before adding the beans, and snow peas. Cook a further 2 minutes until green veg has turned bright green. Drain well.

5 You Plate It

Toss the veggies with the herb butter, place in a serving dish and top with flaked almonds.
